COSTA RICA EXTRA – The next time you are feeling for a snack try something fresh, fast and easy to prepare, instead of the fried chips, tortillas and other not so healthy treats.

Not sure what this mozzarella and tomato treat is called, even if it has a name, but I can assure it is tasty and healthy.

What you will need:

  • Tomato
  • Fresh basil (albahaca in Spanish) leaves
  • Fresh mozzarella (the soft kind found in the diary section)
  • Balsamic vinegar (optional)
  • Virgin olive oil  (I have been using lately a “Mediterranean” blend found at Pricesmart)
  • Bread, recommend the “pan Español” or “ciabattta” (though they may spell it chabata in Spanish) at Automercado
  • Salt

To prepare:

The preparation is simple, slice up a tomato, mozzarella and bread. Alternate a slide of tomato with mozzarella and a fresh basil leaf, spread with a light coast of oil, add salt as needed.  To give the treat a little zing, add some balsamic vinegar. Pricesmart has a great balsamic and inexpensive, Automercado has a better selection of balsamics, some though a little too pricey. Sliced bread on the side.

PS. I recommend Automercado to find all that you need in one place. If there isn’t an Auto near you, shop around, you may have to visit several stores, but all the items are found in Costa Rica.
