A rack of Costco (Pricesmart in Costa Rica) back ribs. A dry rub made up of sea salt, paprika, black pepper, garlic powder, cayenne pepper, chili flakes, and chili powder.

A smoker box filled with maple smokewood.  (You may have to substitute for coffeewood in Costa Rica)

A sauce made of bold BBQ sauce, cider vinegar, Worcestershire, chili powder, garlic powder, and paprika all simmered together. (All these items can be found in Costa Rica at supermarkets like Auto Mercado, Mas X Menos and Walmart)

In the oven wrapped in foil with the dry rub at 350 for 2 hours.

Then thrown on the grill with the smoker; each side 5 minutes then sauce applied to both sides and another 25 minutes flipping every 5 and coating with sauce as necessary.
